Next-generation future foods: Innovative strategies for structure, safety, and sustainability

●Special Issue Information
Call for Submissions: Alternative foods (Working title)
Recent advances show that alternative foods can address the intertwined challenges of climate change, environmental sustainability, and the accelerating global demand for high-quality protein. This special issue seeks to showcase cutting-edge, highly interdisciplinary research that drives the science, technology, and policy of alternative foods forward.

·    Alternative proteins and fats - molecular design, texturization, and functionality

·    Alternative seafoods - marine algae, mycoprotein, and invertebrate-derived ingredients

·    Cultured meats - cell-line development, edible scaffolds, and scalable bioreactors

·    Precision fermentation technology (protein production) - strain engineering, downstream processing, and food-system integration

·    Hybrid foods - co-formulation of plant-, microbial-, and animal-cell-derived components for improved nutrition and sensory quality


We highly welcome the studies on contributing to:

Structure–function relationships: studies that design or model micro- and macro-structures, apply state-of-the-art processing, and elucidate physicochemical or mechanistic details on alternative foods.

Safety and toxicology: assessments of toxicological risk, allergenic potential, and long-term consumption effects on alternative foods.

Comprehensive nutrition: evaluations of amino-acid profiles, micronutrient bioavailability, and nutritional complementarity relative to conventional animal-based foods.

Regulations: analyses of emerging safety-assessment frameworks, nomenclature debates, and commercialization pathways.

Consumer and systems-level impact: evaluations of consumer acceptance (including sensory preferences, cultural attitudes, and willingness-to-pay), techno-economic feasibility (such as cost of production, scalability, and market competitiveness), and environmental impact (including greenhouse gas emissions, land and water use, and life-cycle assessments) of alternative foods.

 


This special issue treats alternative foods not merely as novel products but as components of an interconnected system that integrates scientific, technological, environmental, and socio-economic values.
