이 법인은 사단법인 한국식품과학회(Korean Society of Food Science and Technology, 약칭 KoSFoST)라고 한다(이하 학회라고 한다).
학회는 식품과학에 관한 이론과 기술 연구 그리고 그 응용을 촉진, 보급시키며 나아가 학술과 산업을 연계시킴을 목적으로 한다.
학회는 사무소를 서울특별시 강남구에 두고 필요에 따라 지부를 둔다.
학회는 제2조의 목적을 이루기 위하여 다음 각 호의 사업을 한다.
회원은 정회원, 학생회원, 단체회원과 명예회원으로 구분한다.
회원의 자격과 입회 절차는 다음과 같다.
연회비를 내지 아니하는 회원은 해당 연도의 회원 자격을 잃으며, 그 연도는 회원 유지 기간에 포함되지 않는다.
임원의 임기는 1년으로 하고 회계 연도 시작 일부터 시작한다. 다만, 회장은 중임할 수 없다.
다음 각 호의 어느 하나에 해당되는 사람은 임원이 될 수 없다.
감사는 다음 각 호의 직무를 수행한다.
학회에는 총회, 이사회, 평의원회, 운영위원회, 각종 위원회와 사무국을 둔다.
각종 위원회에 대하여는 별도 규정으로 정한다.
회원이 다음 각 호의 어느 하나에 해당할 경우에는 그 의결에 참여하지 못한다.
학회의 자산은 다음 각 호로 구성한다.
학회의 회계연도는 1월 1일부터 12월 31일까지로 한다.

평의원회 의장은 회장이 임명하며 임기는 1년으로 한다.
평의원회는 회장의 요구가 있을 때, 의장이 필요하다고 인정할 때 또는 평의원 30명 이상의 요구가 있을 때 의장이 소집한다.
평의원회는 다음 사항에 대하여 의견을 제시한다.

이 규정은 정관 제4조 2호에 따라 한국식품과학회가 발간하는 학술지에 연구논문을 투고하는 연구자의 연구 윤리를 확보하는 데 필요한 역할과 책임에 관하여 기본적인 원칙과 방향을 제시하고, 연구 부정행위를 방지하기 위한 사항을 정함을 목적으로 한다.
이 규정에서의 연구 부정행위(이하 부정행위라 한다)는 학회가 발행하는 한국식품과학회지(이하 국문지라고 한다), Food Science and Biotechnology(이하 영문지라고 한다), 식품과학과 산업(이하 산업지라고 한다)에 게재하는 논문을 대상으로 한다.
부정행위는 교육부의 '연구윤리 확보를 위한 지침'에서 정하는 행위로서 다음과 같다.
부정행위에 대한 제보는 구술, 서면, 전화, 전자우편 등의 방법을 통하여 실명으로 하여야 한다. 다만, 익명이라 하더라도 논문명과 구체적인 연구 부정행위 등을 포함한 증거를 서면이나 전자우편으로 제보하는 경우에는 실명 제보에 준하여 처리할 수 있다.
본 조사는 부정행위의 사실 여부를 입증하기 위한 절차로서 제10조의 규정에 따라 조사위원회를 구성하여 진행하여야 한다.
조사위원회의 권한은 다음과 같다.
해당 논문이 연구 부정행위로 판정된 경우 회장은 한국연구재단의 <학술지 등재 제도 관리 지침> 제9조에 따른 조치를 취하여야 한다.
이 규정에 포함되지 않은 사항은 한국연구재단의 <학술지 등재 제도 관리 지침>, 교육부의 <연구 윤리 확보를 위한 지침> 등의 관계 법령에 따라 판단한다.

The Food Science and Biotechnology (Food Sci. Biotechnol.; FSB) was launched in 1992 as the Food Biotechnology and changed to the present name in 1998. It is an international peer-reviewed journal published monthly by the Korean Society of Food Science and Technology (KoSFoST).
The FSB journal covers;
Consumer perception and sensory evaluation on processed foods are accepted only when they are relevant to the laboratory research work. As a general rule, manuscripts dealing with analysis and efficacy of extracts from natural resources prior to the processing or without any related food processing may not be considered within the scope of the journal. The FSB journal does not deal with only local interest and a lack of significant scientific merit. The main scope of our journal is seeking for human health and wellness through constructive works and new findings in food science and biotechnology field.
Food Science and Biotechnology provides results of original research on the physical, chemical, biological, and health aspects of food science and technology, and includes reviews related to food science and biotechnology. Manuscripts must be double-spaced with a recent version of word processor (Microsoft Word) in English (American spelling and usage). All pages must be numbered consecutively starting with the title page and including tables and figures. Lines in the abstract and text should be consecutively numbered in a separate column at the left, but not in the page of tables and figures. A standard font, in a size of 12 points, must be used. Use 2 commas in a series of 3 items (A, B, and C).
Common name of plant or food with a scientific or botanical name should be written in full at first mention in the manuscript. For example, the plant, Fagopyrum tataricum (tartary buckwheat), was grown in the experimental field.
Abbreviations must not be used at first use in the text. Spell out the word(s) at first use and give the abbreviation in parentheses.
Abbreviate 'equation' or 'figure' only if you are using the word with a figure number. Do not abbreviate if 'Equation' or 'Figure' begins the sentence, even if you are using the word with an equation number or a figure number. If citing more than one equation or figure, do not make the abbreviation plural (for example, 'Eq. 1 and 2' or 'Fig. 1 and 2' is correct).

All manuscripts must be accompanied by a cover letter that clearly presents the descriptions about the significance of research work, including its originality, its contribution to new knowledge in the field, and its relevance to the journal's aims and scope in food science and biotechnology.
The title page should include the title, full names, institutional affiliations with mailing addresses including city name (in case of small cities), province name, postal code, country name of all authors, and short version of title (less than 50 letters and spaces).
If the affiliations of the authors are different, authors different from the first author should be marked with superscript numeral designation.
The name of the corresponding author to whom inquiries about the paper should be addressed must be marked with an asterisk and provide the telephone and fax numbers and e-mail address. If the current address of any author is different, include it in a footnote on the title page.
The abstract should be a clear, concise, and one-paragraph summary giving what was done, how it was done, significant results, and major conclusions. Do not use such statements 'I~' or 'We~' or 'Results are discussed'. Abstract must be 150 words or less.
List 5 keywords for indexing purposes.
Introduction should include a brief review of pertinent work citing key references, and objectives of the work. Text that does not exceed 2 typed pages is recommended.
Specific experimental methods should be sufficiently detailed so the work can be repeated. New methods must be described in detail, but the accepted methods can be described briefly with references. For special equipment, reagents, kits, etc., the source, city, state, and country should be specified in parentheses. Biological materials should be identified by the scientific name (genus, species, and if necessary, authority and family) and cultivar, if appropriate, together with the site from which the samples were obtained.
If variation within a treatment (coefficient of variation, that is, the standard deviation divided by the mean) is less than 10% and the difference among treatment means is greater than 3 standard deviations, it is not necessary to conduct a statistical analysis. If the data do not meet these criteria, statistical analysis must be conducted.
Present and discuss results concisely, using tables and figures, comparing with previous work. Do not present the same information in tables and figures. Avoid comparisons or contrasts that are not pertinent and avoid speculation unsupported by the data obtained. Since a separate conclusion section is not to be used, any concluding statements are to be incorporated under Results and Discussion.
Tables should be numbered consecutively with Arabic numerals and should be grouped at the end of the manuscript. Footnotes in tables should be given numeral designations and be cited in the table by superscript. The sequence of numerals should proceed by row. Tables with only a few values should be written into the text. Do not include data that are not discussed in the text. Round off numbers to significant digits.
Figures should be numbered consecutively with Arabic numerals and should be grouped at the end of the manuscript. If there is more than one illustration in a figure, they should be identified as (A), (B), etc. and presented in the text as (Fig. NumberA), etc. Figures must fit one- or two-column format on the journal page. It is strongly recommended to submit illustrations in the actual size at which they should appear in the journal. One-column width is 84.0 mm; two column width is 173 mm.
List sources of financial or material support and the names of individuals whose contributions were significant but not deserving of authorship.
Reference list should be ordered alphabetically by the last name of the first author. Order multi-author publications of the same first author alphabetically with respect to second, third, etc. author. Publications of the same authors must be ordered chronologically. Authors are responsible for the accuracy of their references.
References format is described below.

Formatting References References should be cited only when necessary and the original publication of the argument should be cited if possible.
It is acceptable to cite work that is accepted but not published with the pertinent year and volume number of the reference. Works that are 'submitted', 'unpublished', and 'personal communications' are not accepted.
The Journal titles must be fully spelled.
Reference list should be ordered alphabetically by the last name of the first author. Publications of the same authors must be ordered chronologically. Submission of a manuscript implies: that the work described has not been published before (except in the form of an abstract or as part of a published lecture, review, or thesis); that it is not under consideration for publication elsewhere; that its publication has been approved by all co-authors, if any, as well as - tacitly or explicitly - by the responsible authorities at the institution where the work was carried out. The author warrants that his/her contribution is original and that he/she has full power to make this grant. All the manuscripts to Food Science and Biotechnology should adhere to these regulations. Manuscripts submitted to the journal must represent reports of original research, and the original data must be available for review by the editor if necessary. By submission of a manuscript to the journal, the authors guarantee that they have the authority to publish the work and that the manuscript, or one with substantially the same content, was not published previously, is not being considered or published elsewhere.
All the manuscripts should be prepared under strict observation of research. When citing from published scholarly literature, author try to do so accurately, and unless the material is of common knowledge, author must cite the source for the data clearly. Information acquired through personal contact should be cited only after obtaining permission from the informant. In the revision process, author must respond to reviewer''s comments and either alters your manuscript as requested or state clearly why you consider the suggestion inappropriate. Unfair research activities refer to fabrication, falsification, plagiarism, duplicate or redundant publication including inappropriate authors, in the process of proposing, performing, and publishing the research. Details as follows; "Fabrication" refers to making or producing a fraudulent data or experiment results that do not exist. "Falsification" is manipulating research materials, equipment, or processes, or changing, or omitting data or results such that the research is not accurately represented in the research record. "Plagiarism" is appropriating and using as one''s own another person''s documented ideas, processes, results, or words without proper acknowledgement or giving appropriate credit. Duplicate or redundant publication refers the act of republishing a preceding work without disclosing its publication. Inappropriate authors means to include an individual''s name as author who has not contributed significantly to either the research or contents of a paper as a token of gratitude or for reason of honorable treatment, etc. or to not grant authorship to a person who has academically contributed to research contents or results, without right reason. Also deliberate interference in procedure for the investigation of misconduct in research and deviation from commonly accepted practices within the scientific community are included in unfair research activities.
FSB will assist with the detection of "Plagiarism" by using iThenticate before review process. The manuscript with high similarity to other publications will be rejected without review. It is highly recommended that the authors pursue individual "Plagiarism" check and attach the similarity report, before manuscript submission, by using a specific program provided by their own institutes or a free text similarity service such as CrossCheck, Chimpsky, CitePlag, CopyTracker, eTBLAST, Plagium, SeeSources, and The Plagiarism Checker. In preparation of a manuscript, the following information should be included, if necessary, in where appropriate prior to submission. If any unethical irregularities in FSB contents have been found or noticed, further necessary actions will be conducted by the Committee on Publishing Ethics (COPE) based on the policy of the committee.
When reporting experiments on human subjects, authors should indicate whether the procedures followed were in accordance with the ethical standards of the responsible committee on human experimentation (institutional and national) and with the Helsinki Declaration of 1975, as revised in 2000 and 2008. Any study reporting experiments on animals including human must indicate approval by a responsible institutional review board (IRB). If doubt exists whether the research was conducted in accordance with the Helsinki Declaration, the authors must explain the rationale for their approach, and demonstrate that the institutional review body explicitly approved the doubtful aspects of the study. When reporting experiments on animals, authors should be asked to indicate whether the institutional and national guide for the care and use of laboratory animals was followed.
When an author or the institution of the author has a relationship, financial or otherwise, with individuals or organizations that could influence the author's work inappropriately, a conflict of interest may exist. Examples of potential conflicts of interest may include but are not limited to academic, personal, or political relationships; employment; consultancies or honoraria; and finical connections such as stock ownership and funding. Although an author may not feel that there are conflicts, disclosure of relationships and interests that could be viewed by others as conflicts of interest affords a more transparent and prudent process. All authors must disclose any actual or potential conflict of interest. FSB may publish such disclosures if judged to be important to readers. The Conflict of Interest statement should list each author separately by name:
Patients have a right to privacy that should not be infringed without informed consent. Identifying information, including patients'' names, initials, or hospital numbers, should not be published in written descriptions, photographs, and pedigrees unless the information is essential for scientific purposes and the patient (or parent or guardian) gives written informed consent for publication. Informed consent for this purpose requires that a patient who is identifiable be shown the manuscript to be published. Authors should identify Individuals who provide writing assistance and disclose the funding source for this assistance. Identifying details should be omitted if they are not essential. Complete anonymity is difficult to achieve, however, and informed consent should be obtained if there is any doubt. For example, masking the eye region in photographs of patients is inadequate protection of anonymity. If identifying characteristics are altered to protect anonymity, such as in genetic pedigrees, authors should provide assurance that alterations do not distort scientific meaning and editors should so note.

이 규정은 사단법인 한국식품과학회 사무직원의 급여와 퇴직금에 관한 사항을 정하는데 그 목적이 있다.
급여의 지급 금액과 지급 방법은 연봉 계약 시 협의하여 별도로 정한다. 급여는 매월 25일에 지급한다. 다만, 지급일이 휴일인 경우에는 순차적으로 그 전일에 지급한다.
성과급은 근무성적에 따라 운영위원회의 결의를 거쳐 지급할 수 있다.
급여의 계산은 당월 1일부터 말일까지로 한다. 단, 신규채용,승진,승급,감봉,기타의 경우 발령일을 기준으로 월 급여액을 근무일수로 계산하여 지급한다.
퇴직금은 만 1년 이상 근속한 직원이 퇴직하였을 때 퇴직한 달의 월평균 연봉액에 근속년수를 곱한 금액으로 한다. 단, 1년 미만의 단수는 6월 이상을 하고 6월 미만은 월할하고 월미만 단수는 1월로 한다.

이 규정은 본 학회에서 사용되는 문서의 작성, 처리, 편철 및 보존의 방법을 정함을 목적으로 한다.
문서의 종류는 다음과 같이 구분한다.
일반 발신문서는 두문, 본문, 결문으로 구성한다.
두문은 발신기관명(본 학회 명칭), 분류기호, 시행년월일, 수신기관을 말한다. 수신처가 여러 곳일 경우에는 "수신처 참조"라고 쓰고, 수신처를 명의란 다음 줄에 예기한다.
본문은 제목과 내용으로 구분한다.
결문은 명의란과 수신처로 구분한다.
외부로 발송되는 모든 문서는 회장의 명의로 함을 원칙으로 한다.
접수된 문서는 푸른색의 접수일부인을 문서의 왼쪽 하단에 날인, 접수일자와 번호를 표기하고 문서접수대장에 기입한다.
문서를 발송할 때에는 오른쪽 하단에 붉은 색의 발송일부인을 찍고 문서발송대장에 기록한다.
업무일지는 매일 작성하고 작성일자와 시간을 기입하여야 한다.
임원, 운영위원 또는 제위원회의 업무지시는 업무지시서의 양식에 따르며, 담당자는 그 시행결과를 보고하여야 한다.
이사회, 평의원회 및 운영위원회의 회의록은 총무운영위원이 작성하고, 제위원회의 회의록은 위원장이 작성한다.
문서는 매 안건마다 보관철의 조견표가 있는 면에 완결 일자순으로 최근 문서가 상부에 오도록 철하고, 그 반대면에 색인 목록을 붙인다.
보관철의 조견표에는 문서분류번호, 기능명칭, 보존기간, 보존기간 만료일자 및 장수를 기재하여야 한다.
문서의 보존기간은 영구보존, 10년보존, 3년보존 및 1년보존의 4종으로 나누며 문서별 보존기간은 별표와 같다.
보존기간이 경과된 문서는 이사회의 의결을 거친 다음 보존문서 기록대장에 붉은 글씨로 폐기일자를 기입한 후 폐기한다.

비품의 구입 또는 보수는 소정양식에 따라 집행한다.
비품의 사용 중 도난, 망실, 파손 등이 일어났을 때는 소정양식에 따라 처리한다. 노후 혹은 부분적 및 기타사유로 사용이 불가능한 비품은 운영위원회의를 거쳐 불용품으로 처분하고 비품대장에 기재하여야 한다.
비품의 가액은 취득가액으로 하며 수증품의 가액은 시가로 한다.

이 규정은 한국식품과학회 (이하"본 학회"라 한다.)의 임원, 운영위원, 사무원, 회원 등이 업무로 국내외에 출장시의 여비에 관한 사항을 규정함을 목적으로 한다.
여비는 철도임, 선임, 항공임, 자동차임, 현지교통비, 숙박료, 식비, 및 준비금 등으로 구분한다.
여비는 순로에 의하여 계산한다. 다만, 업무형편상 또는 기타 부득이한 사유로 인하여 순로에 의하기 곤란할 경우에는 실지 경유 노정에 의한다.
별정직원 또는 학회외 인사가 본 학회의 업무를 위하여 출장할 경우에는 회장이 인정하는 직급에 상당하는 여비를 지급할 수 있다.
여비는 정산하지 아니함을 원칙으로 한다. 다만, 여행일정 등 변경이 있을 경우에는 예외로 한다. 이 경우 추가경비는 사전 결재를 득한 사항이나, 천재지변 기타 불가항력적인 경우에 한하여 따로 실비 정산할 수 있다.
여비의 신청 및 필요한 경우 정산은 서식에 의거 서면에 의하며 운영위원회의 검토를 거쳐서 이루어져야 한다. 모든 출장의 신청 및 정산의 최종 결재권자는 회장이나 국내 출장은 운영위원장이 전결할 수 있다.
출장명령을 받은 자는 귀소 후 국내출장인 경우 5일 이내, 국외출장인 경우 10일 이내에 결재권자에게 서면으로 복명하여야 하며, 국외출장의 경우 해외에서 취득한 자료를 학회로 송부하여 자료의 활용도를 제고하여야 한다. 다만, 육로 100㎞ 이내의 근거리 출장, 운영위원장이 인정하는 국내출장의 경우 및 기밀에 속하는 사항은 구두로 복명할 수 있다.
제주도 지역을 제외한 국내 항공여행은 긴급한 용무로서 운영위원장의 승인을 얻었을 때에 한한다.
항공운임은 구분에 의하여 실비액을 지급한다.
철도 및 선박운임에 있어서는 다음 각 호에 의하여 지급한다.
자동차 운임을 실비액을 지급한다.
식비 및 일비는 일수에 따라, 숙박비는 숙박수에 따라 운영위원회가 정한 기준에 의거하여 지급한다.
국외출장 시 필요한 경우에는 준비금을 지급한다.
초청자 부담으로 국외에 출장하는 경우에는 여비를 지급하지 아니 하는 것을 원칙으로 한다. 다만, 초청자가 당해 경비의 일부만을 부담한다고 할 경우 피 초청자가 필요로 하는 경비와 초청자가 부담하는 경비와의 차액은 피 초청자가 구체적으로 그 필요성과 금액을 명시하여 회장의 승인을 받은 경우에 한하여 지급할 수 있다.
이 규정에 정하여지지 않은 사항은 회장의 별도 방침을 받아 시행한다.

KSA는 한국식품과학회의 발전을 위하여 학회가 필요로 하는 역할을 수행하거나 당해연도 학회 회장의 자문 요청에 응할 수 있다.
KSA 회원은 명예회원으로 구성한다. 명예회원이 KSA에 가입 신청을 하고 소정의 회비를 납부하면 KSA 회원의 자격을 얻는다. KSA 탈퇴는 회원의 신청에 의하여 이루어지며 납부한 회비는 반환하지 아니한다. 명예회원의 자격은 학회 정관 제2장 제6조에 따라 한국식품과학회 회장을 역임한 사람이나 정회원 유지기간이 25년 이상이고 이사회의 승인을 얻은 사람으로 한다.
KSA는 총무 1명과 회원으로 구성한다. 총무는 회원 가운데서 호선으로 선출하며 임기는 1년이고 연임할 수 있다.
KSA 운영경비는 회비와 기타 찬조금으로 충당한다.
